Kombucha Na Dálaigh
Kombucha Na Dálaigh is a small-batch Irish kombucha producer based in Gort a’ Choirce, in the heart of the Donegal Gaeltacht.
Our story is shaped by family heritage, the Irish language and the culture of the place we call home. From our microbrewery and fermentation school, we make naturally fermented kombucha using thoughtfully chosen ingredients and a slow fermentation process to create balanced, refreshing flavours.
Our fermentation school gives visitors the chance to learn more about the process behind kombucha and other fermented foods and drinks. Through workshops, tastings and special events, we share practical knowledge, traditional techniques and a deeper appreciation for fermentation as a living craft.
For visitors interested in local food and drink, wellbeing, sustainability and Irish culture, Kombucha Na Dálaigh offers a distinctive taste of Donegal and an opportunity to experience fermentation in the Gaeltacht.
Visits to our microbrewery and fermentation school are available by prior appointment, with seasonal workshops and events taking place throughout the year.
Whether you are exploring Donegal’s food culture, interested in fermentation, or simply curious about how kombucha is made, we are delighted to welcome you and share the craft behind Kombucha Na Dálaigh.
